Abstract
The title of this thesis is "Food Menu and its Significance in '
the Age of Mamluke Sultans in Egypt (648-923) - (1517-1250)".
This thesis consists of five chapters with an introduction and a conclusion.
The first chapter presents food markets and food goods in Egypt during the age of Mamluke Sultans. The chapter introduces the nature of these markets, the quality of goods that are sold in them as well as the recourses of these goods. Moreover, this chapter presents the owners of the restaurants and the cooks declaring their economic status and the different tools which exist in their shops, such as stoves, vessels and clothes. In addition, this chapter tackles the role of the state in supervising food makers.
The second chapter tackles eating outdoors including restaurants, kitchens, peddlers and dealers. This chapter introduces eating at different places, such as hospitals, prisons, bars, hotels, agencies and tombs. It also presents eating in different places of worship, such as hermitages, mosques and prayer rooms as well as eating in public fountains and schools.
The third chapter is concerned with investigating the kinds of food associated with religious occasions of Muslims and free non­ Muslims enjoying Muslim protection. This chapter also discusses the ceremonial occasions of Sultans, such as the inauguration of a new Sultan or his recovery from a disease, in addition to some other occasions such as Easter and the Day of Breaking the Gulf
Chapter four is concerned with investigating the social dimension of the Egyptian food menu. This chapter presents the components of meals for each class in the Egyptian society, in addition to the tools and vessels used to prepare these meals and the ways of their preparation.
The fifth chapter includes the effects of the political and natural circumstances on the Egyptian food menu. This chapter presents how the economic and social status of the Egyptian families has been influenced by the political , economic and natural circumstances prevailed in the age of Mamluke Sultan. It also presents how the kind of food has been influenced by these circumstances. The chapter ends with a list of all the Arabic and foreign references used in this thesis.
