BACTERIOLOGICAL STUDIES ON FOOD POISONING MICRO-ORGANISMS PRESENT IN HOSPITALS FOOD OF ANIMAL ORIGIN AND THEIR HANDLERS

Abstract


Four hundred and eighteen samples from of them three hundred samples of muscle of frozen poultry carcasses, frozen beef frozen meat and food handlers were collected from the kitchens ofBelbeis General Hospital and Zagazig University Hospitals and were examined for bacteriological examination and 90 blood samples and 90 stool samples from patient showing food poisoning signs were collected from Zagazig Lodging for Girl Sudents, Zagazig Fever Hospital and Fakous Fever Hospital.. The bacteriological examination of the examined samples showed that the numbers of positive culture was higher from workers (149) than those from frozen poultry (118) and frozen beef meat (.J25) isolates. This mean that food handlers had an important role in food contamination.
The isolated organisms from examined samples revealed that many organisms were incriminated to be the cause of food illness. Such organisms were: Salmonella spp., Proteus spp., E. coli, Klebsiella spp., Citrohacter spp., Shigella spp.. Se"atia spp.. Pseudomonas aeruginosa,
• Staph.aureus and Streptococcus spp.
