A Study on Some Food Pollution Under Different Environmental Conditions

Mahmoud Hellmy Moustafa Onsy;

Abstract

Certainly different environmental conditions of food processing, preservation, storage, packaging, and handling have a great effect on its hygienic and nutritional and health value. These conditions in separate and collectively may play on the formation and accumulation of biological and non biological pollutants. This may affect food and make it unsuitable for human consumption.

This study is aimed to follow the presence of some pollutants, identifying them qualitatively and quantitatively. The studied foods are, milk, cheese, luncheon and, corned beef packed in plastic package and tin cans and stored under proper conditions and under actual environmental conditions for time periods from one week to six months.
This study is focused on the following:-
1- Determining biogenic amines content ( histamine , tyramine , spermine, spermidine, cadaverine, putrescine, tryptamine, and B. phenyl ethylamine).
2- Investigating, the effect of storage conditions on the mentioned foods.
3- Studying the interaction between the selected preserved food and packaging material.

To put this plan into action, representative samples from the production factories, corned beef, luncheon, white cheese and milk were produced with previous arrangement with the producers. We considered the homogeneity of all samples and plastic should have been used in packaging. But canned luncheon and canned corned beef samples were selected from the market for investigation, also hpmogeneity was considered.
