Chemical and technological studies on Mono-sex Bolti fish

Abstract
Production of all-male fish by the dietary administration of 17- a- MT (17- alpha methyltestosterone) was well-established and gradually increased in fish grow out farms, mainly at Kafr EI-Sheikh governorate.
The present study was suggested to investigate the effect of feeding by hormone for sex reversal in Nile Bolti tilapia (Oreochromis niloticus) on physical, chemical and microbiological properties. The effect of freezing and frozen storage on keeping quality and biological value of mono-sex Bolti fish were also studied. The organoleptic qualities as well as the effect of cooking methods on the treated fish compared with the common fish were under taken.
