A STUDY ON THE OCCURRENCE OF YERSINIA MICRO-ORGANISMS IN MILKAND SOME DAIRY PRODUCTS

Abstract


A total of 200 samples of individual raw milk, bulk milk, icc-cream and Damietta cheese, collected from different dairy farms and supermarkets in Kafr-El-Shcikh provmce, were examined bacteriologically for detection and identification of
. existing Yersinias.


The results recorded m this investigation declared that,. Ycrsin ia spp. could be detected in 4% and I 0% of individual raw milk and bulk milk samples respectively. While failed to be detected in ice cream and Damietta cheese.

Yersinia enterocolitiea was isolated from 2% ofbulk milk samples while it failed to be isolated from individual milk samples.

Each of Yersinia frederiksenii and Yersinia kristensenii was detected in 2% of the examined individual milk samples, while they were detected in 6% and 4% of bulk milk samples, respectively. Only Yersinia intennedia could be detected in 6% of bulk milk samples.

The isolated strain of Yersinia enterocolitica was sensitive to Streptomycin, Ampicillin, Sulphamethoxazole and Doxycycline. While it was resistant to Penicillin and varied in sensitivity to Neomycin and Cefotaxine.
