Abstract
Milk as it comes from a normal udder of a healthy animal contains a negligible number of harmful organisms. Application of strict hygienic measures during production and handling prevents serious addition of more microorganisms. Furthermore, contamination at the site of production has deleterious effects on the keeping quality of milk and the suitability for further processing and for manufacture of various products.Milk that is contaminated with pathogenic microorganisms at the site of production presents a hazard to public health.
