EVALUATION AND PREDICTION OF KEEPING QUALITY OF CHILLED FISH

Abstract
The trends in this study is to assess the organolyptic, chemical and bacterial changes which occur• in whole some Nile fishes (Tilapia nilotica (bolti) and Latis niloticus (keshr ba •ad)J and one marine fish [Sparus auratus (sea bream)) during storage in refrigemtor at 4 C and under crushed ice. One hundred and sixty fresh fish samples (120 Nile fish samples and 40 marine fish sample) were obtained just after catching and all samples were subjected to organolyptic, chemical and bacterial examination dur•ing the storage period. From obtained results it could be determined the proper• shelf-life (Storage Period) of such examined fishes, beside the most important chemical and bacterial specifications.
