RADISH SEED SPROUTING USING SALINE WATER AND THEIR BIOCHEMICAL AND PATHOLOGICAL EFFECTS ON ALBINO RATS

Abstract
Egyptian radish sprouts using tap water (NRS) and saline water (SRS) were used to study the effect of seed sprouting on sprout characters, proximate analysis, mineral content, vitamins, fatty acids and phytochemical compounds fractionation in sprouts vs. seeds and the obtained results were recorded. NRS and SRS were used to study their hypoglycemic properties against diabetes-induced rats. The rats were distributed into 4 groups,1-normal controlwith standard diet, 2-diabetic control withstandard diet, 3-diabetic with NRS semi-modifieddiet, 4-diabetic with SRS semi-modified diet, each group of 5 rats. Diabetes was induced by streptozotocin (STZ) injection (60 mg/kg body weight). STZ –induced diabetic rats showed significant increase in the levels of blood glucose, cholesterol, uric acid,creatinineand urea in addition to AST, ALT and ALP activities, as well as daily water intakes also relative kidneys,and liver, weights .On the other hand, body weight gain (BWG), WBC total counts and differential leucocyte counts ratio and blood PLT levels were decreased compared to normal control rats. The addition of NRS or SRS at 10% to diabetic rats diet as semi-modified diet resulted significant decrease in blood glucose of about 28% and 54% respectively. The increased and decreased values by STZ-diabetic were improved by SRS semi-modified diet only except total cholesterol and triglyceride. From these results, it may be concluded that SRS as semi-modified diet has the potential to alleviate hyperglycemia and possess antioxidant effects in cases where diabetes is present and to serve in the primary prevention of diabetes mellitus. However, more research needs to evaluate radish etiolated sprouts vs. Green sprouts especially for lipid metabolism.
