ENTEROBACTERIACEAE IN MILK AND SOME DAIRY PRODUCTS FOCUSING ON SALMONELLAE AND E. COLI O157:H7

Abstract


Two hundreds samples (50 each) of milk, cream, ice cream and kareish cheese were examined in winter and another two hundreds samples were examined in summer. The samples were collected from markets and shops in different localities in Giza and its subrubs, and were examined bacteriologically for detection, count, isolation and identification of Enterobacteriaceae.


Incidence of Enterobacteriaceae:

The incidence of Enterobacteriaceae in the examined samples of milk, cream, ice cream and kareish cheese based on "presence or absence" test was 100, 56, 100, and 76%, respectively in winter and
100, 92, 100, and 100%, respectively in summer.



Total Enterobacteriaceae count:

The mean count Enterobacteriaceae in one ml of milk, cream, ice cream and Enterobacteriaceae in one g of kareish cheese was 4.7 X
106, 4.94 X 103, 8.74 X 103, and 6.02 X 104 respectively in winter and

4 X 10 11, 9.27 X 105 , 7.7 X 108, and 2.4 X 10 10 respectively in summer.
