CONTAMINATION OF MEAT WITH BACTERIA IN SLAUGHTERHOUSE

Abstract


The present investigation was aimed to study the contamination of meat with bacteria after slaughter in both automation and manual slaughterhouse. To achieve this aim different cow, buffalo, camel, sheep and chicken meat samples were taken the total count of bacteria was determint immedcately after slaughter and continuous for three days.

Bacteria spec1es includes, Sporeformer, Lactic acid bacteria, Coliform, Salmonella, Enterobacteriaceae, Stephylococcus aureus, listeria and yeresinia.

The obtained data can be Sammerized on the following:


kCounts in automation slaughterhouse:-


1- Chicken samples showed the highest total bacterial counts among the other meat samples after slaughtering during the I st month survey. The counts bacterial of samples were double the other samples.

2- During 2nd month the automation slaughterhouse survey showed the same trend of total plute counts.

3- Storage indicated slightly increase of total plate counts at 5°C. during I 51 and 2"d month. The rate of increasing during the I" month. was higher than that of the 2nd one. The highest rate of contamination was for chicken and buffalo.
