Abstract


Lactobacilli belong to the group of lactic acid bacteria (LAB), they possess several remarkable abilities such as the production of lactic acid, enzymes such as β- galactosidase and natural antimicrobial substances called bacteriocins. Bacteriocins are the most important substances as they used to fight many pathogens and food spoiling microorganisms.

The antimicrobial activities of Lactobacillus acidophilus ATCC 4356and Lactobacillus plantarum ATCC 8014 were studied in vitro against ten different gram positive and negative pathogens in addition to a yeast fungal strain Candida albicans as testers. Two pathogens (MRSA as a gram positive pathogen and Pseudomonas sp.as a gram negative pathogen) were selected to be testers for bacteriocin production throughout this study.
