Abstract


In Egypt, there is a lack of information about physical and mechanical properties of agricultural materials, for the varieties and spices prevailing in the country.
The main objective of this work was to study the change in some physical and mechanical properties of apple and potato tubers during handling and transport., that can be a basis for further study concerning the design of harvesting and handling, transport equipment.
This dissertation was carried out to study some problems related to handling and transport apple and potato tubers.
The experimental work groups results can be summarized in the following points:
I- Physical characteristics o(the apple and potato tubers:
Physical characteristics of Apple and potato tubers studied in this work changed linearly with the increase in storage time with highly correlation.
1-The mean values of Length varied (from 41.85 to 88.01, mm); and (from 43.37 to 80.98, mm) for potato tubers and Apple respectively. And decreasing rate of length were 7.45 %, while were 10 % for potato tubers and Apple respectively.
2- The mean values of width varied (from 42.26 to 67.09, mm); and (from

43.65 to 69.70, mm) for potato tubers and Apple respectively. And decreasing rate of width were 7.81 %, while were 5 % for potato tubers and Apple respectively.
3- The mean values of thickness varied (from 38.02 to 66.07, mm); and

(from 40.93 to 64.73,. mm) for potato tubers and Apple respectively. And
