Abstract


Fish is one of the highly nutritive food articles, which is contributed in dissolving food shortage especially because fishes contain proteins of high biological values.
Fishes might be subjected to many risks of contamination, either from their natural aquatic environment due to increasing pollution in the environmental or during fish capture and processing, which lead to rapid spoilage of fish and may risk of public health.
Freezing is considered to be one of the most effective methods for a fa rly long-term storage of fishes nearly as fresh fish. These depending upon the method of freezing (rate and temperature), which leads to stopping of enzymatic activity and multiplication of microorganisms in food during storage period at -l8°C.
The present study aimed at surveying quality of certain imported fish and fish products imported from Elamarat, Saudi Arabia, Yamen , High Seas ,Moraqo and North Eroupe in animal health institute and from Cairo and Giza supermarkets included (Mackerel, Sardine, Sardinella, fish burger and breaded shrimp). Such quality control was evaluated through organoleptical , microbiological and chemical examinations of
30 random samples of each fish and fish products.
