Abstract


It is well known that milk fat consists of many lipid classes. Each class again consists of many different kinds of molecules, as the component FA residue is different, however, exhibits many structural differences and similarities. The physical properties of milk fat, its chemical reactivity and its neutritional value are dependent on FA pattern.
