SAFETY OF STREET VENDED MEAT MEALS EXPOSED TO THE OPEN ENVIRONMENT

Abstract


One hundred samples of street-vended ready to eat meat meals were collected from different province in Cairo and Giza governorates. Collected Samples were represented by meat loaves, kofta sekh, kabab and shawarma (25 of each).
These samples were examined bacteriologically to determine their quality. Only, all collected shawerma samples were examined for detection of lead and cadmimn.
The obtained results of bacteriological examination indicated that the mean values of aerobic plate count (APC), Enterobacteriaceae count, total coliforms count, Staphylococcus aureus count, Streptococcus faecalis count per gram were 1.6 x 107 ± 2.5 x 106 , 2.5 x 106 ± 4.4 x 105 , 5.69 x 105 ± 8.8 x 104 ,
7 x 104 ± 5.8 x 103 & 3.4 x 103 ± 3 x 102 for meat loaves; 1.8 x 10 7 ± 2.8 x 106
