Abstract
Legume seeds constitute the protein rich part of the basic diet in many developing countries including Egypt. They are rich sources of cheap proteins (20 - 40%), carbohydrate (50 - 60%) and fairly good sources of thiamin, calcium and iron. For these reasons, legumes are used to a large extent as sources for meat substitutes and functional protein in food industry. Considering that 30% of the world population (the developed countries) uses

One of the most obvious solutions to this problem is an extended utilization of vegetable protein instead of meat.
