A total (212) samples of edible oils, butter, milk cream and fish were obtained for qualitative and quantitative analysis of 13 organochlorine pesticides (i.e. hexachloro benzene, alpha, beta, gamma and delta-hexachlorocychlohexane , heptachlor, heptachlor epoxide, dieldrine, endrin, p,p'-DDT, o,p'-DDT, p,p'-DDE and p,p'-DDD and polychlorinated biphenyl's (congeners no. 28,52,101,118,138,153 and
180).

Samples were collected from 1995-1996 covering some markets in great Cairo. Some pesticides were detected such as HCH isomers, DDT derivatives, heptachlor and it's epoxide, dieldrin and hexachlorobenzene. No endrine appeared in any samples analyzed. PCB's were detected either.

Heat processing were very effective at removing investigated organochlorine pesticides and PCB's from edible oils, butter, milk cream and fish.
Estimated Dietary Intake (EDis) of investigated contaminants were
studied and compared with their Acceptable Daily Intake (ADis). They were generally below the limits recommended by FAO/WHO (1985).
