MICROBIOLOGICAL PICTURE OF RETAILED MEAT IN MENOFIYA GOVERNORATE

Abstract


A total of 100 swabs were obtained from the outside surface of thigh region of( cattle, buffalo camel, sheep and goats )carcasses surfaces as 20 swabs from each of them were collected from random area from retailed meat in Menofiya governorate. The collected swabs were examined microbiologically.



The result revealed that:

1. The mean value of total bacterial count, Enterobacteriaceae count, faecal coliform count, Enterococci count, Staphylococci count, mould count and yeast .count in Cattle carcasses
surfaces were: 2.31 x 106 ± 3.76 x lOS, 3.30 x 104 ± 6.45 x

103, 6.00 X 103 ± 8.34 X 102, 1.39 X 104 ± 2.94 X 103,1.68 X

104 ± 3.92 X 103,1.22 X 104 ± 2.07 X 103and 2.85 xlQ3 ± 3.99 x 102 cfu/cm2in carcasses surfaces, respectively.

2. The mean value of Total bacterial count, Enterobacteriaceae count, faecal Coliform count, Enterococci count, Staphylococci count, Mould count and yeast count in buffalo
carcasses surfaces were: 1.9x106±3.04 x 105, 2.81 x 104 ±
5.37 X 103, 5.69 X 103 ± 7.05 X 1Q2 , 9.37 X 1Q3 ± 1.35 X 103,

8.54 x 103± 1.12x 103, 1.40x 104±3.97x 103, 2.14x 103±

1.43 x 102 cfujcm2in carcasses surfaces respectively.
3. The mean value of Total bacterial count, Enterobacteriaceae faecal Coliform count, Enterococci count,

Staphylococci count, Mould count and yeast count in camel
