Abstract


In recent years, probiotics, prebiotics, synbiotics, immunobiotics, parabiotics and postbiotics have gained extensive awareness in the scientific, technological and health fields, where they have been used both prophylactically and therapeutically. Microbiome research has also led to a broader public understanding of probiotics, and to a more rational view of integrating an understanding of the beneficial roles of probiotics in improving human health. In line with these developments, it is necessary to search for a new probiotic candidate with a new concept in selection. The selection of new strains should be based on the scientific validation and simultaneous interrelated with the requirements of health benefits as per the host’ health status. The major target of the present study is the isolation of probiotic strain capable to produce bioactive compounds. The accomplishment of this target in the present study was done through the isolation of LAB from colostrum samples; the characterization of purified isolates phenotypically; screening for bioactive compounds, molecular identification of the promising isolate; in vitro biological evaluation of the bioactive compounds; evaluation of probiotic selection criteria and safety assessment and application of the strain as probiotic to produce fermented milk product.
