Abstract


SUMMARY
Fifty samples of imported frozen liver were subjected to physical,
bacteriological and chemical examination. Sixty swab samples were obtained from hands, surfaces of the tables and knives, which used in preparation of liver, the swab samples were subjected for bacteriological examination
This work was done to achieve the quality of the imported frozen liver in North Senai Governorate and if it constitutes any hazard problems for human health.
. Physical indices: •
The minimum, maximum and mean values of odor, color and appearance in the examined imported frozen liver samples were80.90,
99.80, 86.75; 78.70, 79.70, 86.75; 80.60, 99.60, 85.00 respectively
