Abstract
" Safety and quality aspects of dried milk products "
One hundred and forty samples of dried milks (50 whole milk powder and 30 of each skim milk powder, powdered infant milk formula and milk-cereal based baby formula) were gathered from several retailers, supermarkets, and pharmacies in Cairo and Giza Governorates for evaluation of its different quality and safety parameters also determination their degree of acceptability to Egyptian standards.
A- Whole and skim milk powders
Sensory evaluation
By grading of dried samples depended on their sensory parameters, we found that 60.00% of excellent quality, 24.00% of good quality, 10.00% of fair quality and 6.00% of poor quality for examined whole milk powder samples. While 56.67% of skim milk powder was of excellent and the rest of samples were of good grade. The highest flavor defect observed in examined samples was cooked flavor in 48.00% of whole powder samples and 53.33% flat flavor for skim milk powder.
The chemical analysis of whole and skim milk powder samples
The ranged values of moisture%, total solids%, fat%, protein%, and titratable acidity% was 2.20-5.00, 95.00-97.80, 26.00-28.70, 25.33-27.84 and 0.75-1.20 % in the examined whole milk powder samples and 3.00-4.33, 95.67-97.00, 0.75-1.40, 32.20-36.70 and 1.00-1.40 % in the examined skimmed milk powder samples, respectively. These results were acceptable to requirement established by Egyptian standard (ES: 1780/ 2014).
Analysis of samples for their toxic metals (Lead, Mercury, Cadmium and Arsenic) concentrations by using Inductive Coupled Plasma - Mass Spectrometer (ICP-MS)
Lead
Both whole and skim milk powders were contaminated with lead in a ranged value of 0.150-0.393 and 0.136-0.246 mg/kg in a percentage of 68.00 and 66.67, respectively.
Mercury
Mercury could detect in a mean value of 0.261 ± 0.052 mg/kg for whole milk powder samples in a percentage of 34.00%, while 0.347 ± 0.110 mg/kg in a percentage of 40.00% for skim milk powder samples, respectively.
