Abstract


onosodium Glutamate (MSG) is one of the most widely used food-additives in commercial foods. MSG has been associated with various forms of toxicity as Chinese restaurant syndrome, neuroexcitotoxicity, and impaired vision.
The present work aimed to investigate the effect of monosodium glutamate on the histology of the ileum of the adult male albino rats and evaluate the potential protective role of vitamin E.
Thirty adult male albino rats were used in this study. The rats were randomized into three groups:
The control group was further subdivided into three subgroups (IA served as a negative control, IB received 2 ml olive oil daily orally, and IC received 400 IU/kg. BW of vitamin E dissolved in 2 ml olive oil once daily orally), the MSG group (rats were fed 2mg/ kg. BW of MSG once daily orally), and the vitamin E treated group (rats were fed 2mg/ kg. BW of MSG and received concomitant 400 IU/kg/day vitamin E by orally). The treatment was carried out for a period of 14 days for all the groups.
At the end of experiment, rats were euthanized. The obtained terminal ileal specimens were processed into paraffin blocks and stained with Hematoxylin and Eosin (H & E) and Alcian blue combined with Periodic Acid Schiff's stain (PAS)
