EFFECT OF DIETARY CONSTITUENTS ON CARBOHYDRATE AND LIPID METABOLISM IN EXPERIMENTAL ANIMALS

Abstract


The aim of these investigations is to study the effect of different sources of nutrients on lipid parameters on the body. The effect of the cholesterol content in the diet and the presence of vitamin E was also studied. The result revealed that lipid from animal sources caused elevation in most lipid parameters and the same was observed for saturated fats. The presence of high content of cholesterol either with saturated or unsaturated fats caused elevation in lipid parameters. This study proved that simple sugars such as sucrose, glucose and even fructose when consumed in amounts that exceed the normal requirements are hazardous to health. Potato- flour has a lower effect relative to wheat or rice flour with respect to elevation oflipid parameters. The presence of cholesterol in excess amount together with any of these carbohydrate sources complicated the picture and made it more severe. Protein from faba-bean have no harmful effect on lipid parameters investigated, chicken or fish proteins were reasonable. Cow protein caused a significant rise parameters. The effect of these different protein sources on the analyzed parameters was variable.
It was proved that the addition of vitamin E protect against many hazards occurring due to consumption of high fat diet or those containing high saturates.
Results obtained from this study are quite helpful to propose diet regimen or to formulate diet for people susceptible to or suffering
from: atherosclerosis.
