Some hazards in marketed liver

Abstract


One hundred samples of fresh chilled and frozen beef liver are collected from abattoirs and markets from different governorates.
The samples were collected for examination of antibiotic groups residues and hormonal (estradiol, testosterone, zeranol and trenbolone) residues as well as ractopamine residue.
Antibiotic residues were detected by FPT and bioassay followed by HPLC technique and hormonal and ractopamine residues were detected by ELISA.
The effect of temperatures on such residues were discussed.
The public health hazard of such residues as well as the precautions to avoid residues and improve the safety of bovine liver were discussed.
Part I: Market survey
The results of the present study showed that antibiotic residues was found in 20% of fresh chilled beef liver samples and did not found in frozen liver samples using FPT.
From 20% positive samples for antibiotic residues, there were 4 positive sulfadimidine residues samples with a concentration of 66±23 ppb which are below MRL using HPLC technique.
On the other hand, testosterone residues were detected in fresh
