Biography
Mohamed G.E. Gadallah is a Professor Doctor in the Department of Food Science, Faculty of Agriculture, Ain Shams University, Egypt, and now in Department of Food Science and Human Nutrition, Faculty of Agriculture and Food, Qassim University, KSA. My specialization related to cereals and bakery products . With more than 45 peer reviewed publications and book chapters on the cereals related topics: Cereal milling, dough rheology, bread making, baked goods production and quality, gluten free products.
