STUDIES ON THE BIOCHEMICAL CONSTITUENTS OF AMARANTHUS PLANT

Abstract


The aim of this study is to evaluate Amaranth plant growth rate and yield under Egyptian condition and determine the nutritive value of foliags and stem at different stages of growth to establish the best time to use the plant as vegetable or forage, and also determine the nutritive value of the mature seeds.
This work was carried out at the strawberry and non
traditional Horticulture crops Research, South Tahreer, Behera Governorate. A complete randomized block design with three replicates was used. The seeds was sowing in rows, and Plant distances were 30 em apart .
The following chemical analysis were don on leaves and
stems at (4,5,6, and 7 weeks after sowing): fresh and dry weight­ chlorophyll a,b and carotenoids - total crude protein - total carbohydrate -soluble carbohydrate (reducing , non- reducing and total sugars ) - free amino acids - vitamin, c - oxalat - ash - minerals (P,K, Ca, Mg, Na, Mn, Zn and Cu). In mature seed the following chemical analysis were don: fresh and dry weight - carbohydrates - sugars (reducing - non- reducing and total) - nucleic acids -vitamin, C-ash- minerals (P,K, Ca, Mg, Na, Mn, Zn and Cu) -total crude protein -free amino acids- oxalate- total lipids - fatty acids - unsaponafiable matter. The results can be summarized as follow.

(A) The Analysis of vegetable Amaranth:
1- Fresh and dry weight for leaves and stem increased with the age of harvesting till the seventh week.
2- Amaranth chlorophyll (leaves + stem) increased with the plant
age till the sixth week for both seasons, while carotenoids reached its maximum value at the seventh week during the first season and fifth week for the second season.
3- Leaves + stems total sugars reached its maximum value at seventh week for both seasons.
