Abstract


This work aims to study both mould and mycotoxins contamination of some meat products which are commonly consumed in Egypt. The plan of work was subjected into 3 parts.

The first part is to determine the mouldy profile of 288 samples of luncheon, burger, sausage and minced meat (72 sample I each), this part of study was designed and scheduled including 4 variables:
