Abstract


• Apricot and Peach kernels are conceded as rich source of fat and protein necessary for building cells in human. It is well established that these kernels contain amygdalin, which prevents their utilization in food products. This may be due to that amygdalin hydrolysis produces hydrocyanic acid toxic to human. Therefore, it was a matter of great interest to try to remove this toxicity using different techniques i.e soaking in cold and warm water or by soaking in sodium hydroxide solution (0.1N) sodium bicarbonate solution (0.1N) and finally hydrochloric acid solution (O.lN). The kernels were evaluated chemically to study the effect of those soaking treatments.
