Abstract
Fish is considered an important and excellent source of protein of high biological value. Its food value depends on its large proportion of high grade proteins with all the non-convertible amino acid essential for health. The other nutrients in fish, simple and compound lipids which contain a large amounts of the essential fatty acids; minerals especially phosphorus, magnesium, calcium, iron and copper; and vitamins are like- wise important. Also, fish is considered the main diet for many world people espcially Egyptian population for its high nutritive value, large production, relatively low cost compared with other meats.It is well to know that fish is count one of the most food which subject to rapid deterioration due to hydrolysis of its • content from protein and lipid by enzymatic reactions and microbial contamination. Also, the contamination of such food with heavy metals is very dangerous for human being health that reach to the fish flesh from the surrounding water or from algae. Nevertheless, survey studies should be carried out continuously especially in view of world climatic changes and water pollution that might effect the fish quality and sanitation.
