CHEMICAL AND TECHNOLOGICAL STUDIES ON THE PRODUCTION OF MUSHROOM AND THE POSIBILITY OF PROCESSING SOME PRODUCTS

Abstract


The object to investigate the suitable substrates and factors
affecting for growth and production of three mushroom strains (oyster, button and shiitake) from china were tried to be cultivated under Egyptian conditions. Besides, evaluation of the chemical constituent of the fmit bodies production and the effect of canning, oven and sun d1ying and storage on physico­ chemical caracteristics. The results indicated that, the potato dextrose yeast extract agar medium, also grain media supplement with salt mixtures was the best media for both rate and fungai growth. The organic wastes for cultivation mushroom were wheat straw, lice straw and sawdust, ric e straw or wheat straw was the best for productivite of oyster, wheat straw compost was of button and sawdust was of shiitake mushroom. Fresh oyster, button and shiitake contained the high protein (30.41-32.15%) also, contained high content of essential amino acids, minerals and the high of essential amino acids. Canning and drying processing caused generally a slight decreaqse of the some composition, Neither mesophilic nor thetmophilic bacteria were detected in cans mushroom and the blanching of mushroom samples perior to drying for reducing the initial microflora during storage period. Sensmy evaluation of the processed mushroom samples were of quality, the rehydration rations of oven and sun dtying were higher general in untreated.
