The present work aims to assess the toxic effect of sodium nitrite on the different biochemical parameters of the blood and to evaluate the effect of
•...,.. supplementation of antioxidant vitamins C and E. AST, ALT, urea, creatinine, y-GT, albumin, nitrite, hemoglobin and methemoglobin were evaluated after the end of the experimental periods lasted for one year on male albino rats. Also, histopathological examination was carried out. Serum levels of urea, creatinine, AST, ALT and y-GT were significantly elevated in the nitrite treated groups and this elevation is a dose-dependent. Methemoglobin level was significantly increased in all treated groups. The potential power of vitamin C appears only on its tendenc) to reduce the methemoglobin level, while urea, creatinine, AST, ALT, y-GT and nitrite were stt11 in high levels. Vitamin E has a major role in the improvement of creatinine, AST, ALT, albumin, y-GT, rutrite and methemoglobin. Vitamin E acetate was more effective than vitamin C in reducing the effect of sodium rutrite intoxication.
