Mango and apricot seed kernels extract have antioxidants and antimicrobial activity can use as a natural food additive for extending the shelf-life of a variety of foods products. During the processing of mango and apricot, the seed is one of the main by-products. Apricot and mango fruit kernels, were collected as by – products and stored at (- 18 °C) until analysis and extract the oil. It was estimated the chemical composition to apricot and mango seed kernel powder and determined the fatty acid and the total phenolic compounds of ethanolic extract of apricot kernels and methanolic extract of mango kernels.
