Abstract
Studies on yellow corn flour fortified with some dairy products and use it in some cereal products
Yellow corn flour was used in snack foods for human nutrition. Also, potatoes tubers were used in production potato chips. Rice was used in starch production to be used in some cereal products (snack foods and chips) by mixing these materials. In the same time, addition of these materials with 20
% soft wheat flour 72 % extract for production of biscuits, saple' and fortification of these products by 3 %of some dairy products (skim milk powder, sweet whey powder and soy milk powder).
The obtained results int is study could be summarized as follows:
6.1. Raw materials:
6.1.1. Physical characteristics for materials which were used in extrudats:
Physical properties (water soluble index, water absorption index and bulk density for yellow com grits, potatoes grits and rice grits showed that the water soluble index were (1.79, 1.63 and 1.51 %), water absorption index were (1.36, 1.89 and 2.19%) and bulk density were (0.831, 0.913 and 0.79%), respectively.
