Abstract


Antioxidant vitamins E. C, and 13-Carotene can prevent the formation and oppose the actions of reactive oxygen and nitrogen species, which are generated in vivo and cause damage to DNA, lipids, proteins, and other biomolecules.

In this essay we will discuss the role of these vitamins through their antioxidant function in the prevention and treatment of many human diseases as cardiovascular diseases, cancer, neurodegenerative diseases, some eye diseases, pre-eclampsia, lung diseases, gastrointestinal tract diseases, and immune system diseases.

Also, we will discuss the biochemistry, function, metabolism. deficiency, requirements, and sources of these vitamins.

Finally, we will outlines the different methods of assay of these vitamins, procedures, advantages and disadvantages of every method.
