Abstract


In the most countries of the world poultry industry contributes in solving the problem of animal food shortage as poultry meat contains essential amino acids and many vitamins and minerals which are essential for human nutrition (Mountney, 1966). Poultry have been implicated as a major source of Salmonella contaminated food products such as poultry egg or meat that cause human Salmonellosis, food borne illness (Lampel et al., 1996 and Humphrey,
1999) as all species and strains of Salmonella are possible pathogens for man

The most common serotypes isolated from humans are Salmonella

· Typhimurium and Salmonella Enteritidis but, the outbreaks of S. Enteritidis in humans increased from year to year (Perals and Audicana, 1988) where the most frequent causes of Salmonella infection reported in humans has been through .the handling of raw poultry carcasses and products in addition to the
· consumption of under cooked poultry meat (Panisello et al. 2000).
