BIOLOGICAL STUDIES ON THE PLANT EXTRACT STEVIOSIDEASANEW NATURAL SWEETANER IN EGYPT

Abstract
The problems ansmg from usmg sucrose as sweetner which increased, obesity, dental caries and disorders of carbohydrate metabolism had its effect on the consumer acceptance of synthetic sweeteners. Stevioside is composed of several natural, heat-stable ent-kaurene glycosides (steviol glycosides) whose intensities of sweetners and flavour profiles differ from each other and vary according to concentration and environment collectively they gave stevia 100 to 300 times the sweetners of sucrose. Nowadays, there is an increase in consumption of sugar stibstitutes for their following advantages.
(I) They are useful for diabetic patients more than sucrose and glucose as they help to lower plasma glucose in blood.
(2) To avoid obesity, and dental caries.
(3) they have the same ability for sweetening with reduction in the caloric value
