Abstract

Food is represent one of the basics for human life, therefore, quality or excellence in their food supply should be an important concem to all food processors. In many Western diets, potato chips or crisps (deep fried potato slices) constitute a major sank food item. Now, there has been an upward trend in consumption of this product in Egypt, in pa1ticular by children. According to the statistical ha11d book of the Egyptian production (1992), the total consumption of potato ships was 24000 tons.
