MICROBIAL STATUS OF POULTRY GIBLETS

Abstract


A total of 75 samples of poultry giblets (25 of each livers, gizzards and hearts) were collected from different retail shops in Alexandtia city for microbiological examination.



The results revealed that the total aerobic count per gram of chicken livers, chicken gizzards and chicken hearts were ranged from 5.7 X 106 to 3.l X 108 , 1 X
106 to 2.4 X 108 and 1.8 X 106 to 1.9 X 108 with mean values of 1.2 X 108 ± 1.5

X 107 , 8.9 X 107 ± 1.6 X 107 and 1.1 X 108 ± 1.4 X 107 colony forming units (CFU)/gram, respectively. The total psychrotrophic count were ranged from 1 X 106 • to 2.8 X 10, 6 X 10 6 to 2.8 X 108 and 2 X 106 to 4.9 X 108 with mean values of
1.2 X 108 ± 1.5 X 107 , 1 X 108 ± 1.7 X 107 and 1.1 X 108 ± 2.2 X 107 CFU/g,

respectively. The total Enterobacteriaceae count wene ranged from 5 X 103 to 2.4

X 107 , 1 X 104 to 2 X 107 and 7 X 103 to 1.2 X 107 with averages of 4.2 X 106 ±

1.2 X 106, 1.9 X 106 ± 8.7 X 105 and 2.9 X 106 ± 7.7 X 105 CFU/g; respectively and the most probable number (MPNY of Coliforms were ranged from 4 X 103 to
1.1 X 106 , 4 X 103 to 1.1 X 106 and 3 X 103 to 1.1 X 106 with mean values of 9.3
X 105 ± 7.8 X 104 , 9.2 X 105 ± 7.4 X 104 and 9.7 X 105 ± 7.0 X 104 CFU/g, respectively.
