STUDIES ON MASTITIC MILK

Abstract

207 milk samples were obtained from the herd of the Fac ulty of Agriculture, Minufiya University and from other farms in Shebin EL-Kom area. The individual quarter milk samples were tested by California mastitis test (CMT) an analysed for rennet coagulation time, curd tension, pH-value, titratable acidity, total solids, fat, chloride and lactose contents, The chlorine/lactose ratio (Koestler number) was also calculated. Total nitrogen, non-cascin nitrogen, non-protein • nitrogen and ash content were also determined, The all obtained milk samples were also microbiologically examined as before and classified
