MICROBIAL STATUS OF SOME FISH PRODUCTS

Abstract


One hundred samples of Fessekh and Moloha ( 50 of each) were collected from diffement localities of different sanitation level at Kafer El-Shiekh government . The collected samples were transferred under compelet aseptic condition to the laboratory where they were subjected to the chemical and bacteriological examination to detect hygienic quality of examined samples the result obtained are summarized as following .

a )Chemical examination

The moisture% ofFessekh samples was ranged from 45 to 59.6 with a mean value of51.01 ± 0.401 .

While for Moloha samples it ranged from 48%---- 60.0% with a mean value of 51.46 ± 0.38.
The Nacl % ranged from 16 - 22 with a mean value of 19.8 ±

0.15 for Fessekh samples, and from 18% ---22.5%withamean value of20.05 + 0.14 forMoloha samples.

b )Bacteriological examination

Fessekh samples has total halophilic count ., Staphylococcus aureus count and Vibrio parahaemolyticus count per/gm of samples ranged from 2 x 10 4-3.9 x 10 6 with a mean value 2.1 x 1Q5 + 0.14 x
10 , 1 x 10 L-1.9 x 106 with a mean value of 7.9 x 10 4 + 0.14 x 10 and 1 x 10 2--- 1.9 x 10 5 with a mean value of0.46 x 10 3 ± 0.15 x 10 respectively .
