Abstract


The curative effect of the Red Quinoa seeds (RQ seeds) against oxidative stress induced by Alloxan and CCl4 treatment in rats. Also, the chemical composition of (RQ seeds) studied in this thesis. The major macronutrient in(RQ seeds) is a carbohydrate, followed by protein, fat, and ash., also(RQ seeds) contain a higher number of total phenolic compounds and total flavonoid content. So found positive correlations between total phenolic components in quinoa and the DPPH. Fifty-six male Albino rats were randomly divided into three main groups. The first group of healthy animals was fed on the standard diet. While the second group (24 rats) injected with CCl4 subcutaneously. injection (for two weeks) to induce oxidative stress. Then rats were divided into 3 subgroups of eight rats each and treated by different concentrations of RQ seeds. The third group (24 rats) were fast 24 hours, injected with prepared alloxan by intraperitoneal injection. on the third day, Alloxan injection was carried out, blood glucose was examined and animals with glucose concentrations higher than 200 mg/dl were considered diabetic rats and have oxidative Stress. Then rats were divided into 3 subgroups of eight rats each and treated by different concentrations of RQ seeds for 6 weeks. The rats were weighed weekly and at the end of the experimental feeding period, the animals were fasted overnight, anesthetized with ether, and sacrificed. They were then quickly dissected to excise the liver, kidney, and Pancreas. The organs were then weighed. From the obtained results, the researcher concluded that stress groups (Alloxan and CCl4) were at significantly increased risk for oxidative stress. Conclusion: However, the results indicated that a diet fortified at 5% and 10% RQ seeds improves weight gain, reduces antioxidant enzymes (SOD, CAT, and GPx), liver enzymes, kidney, function, lipid profiles, serum glucose and reduces the risk to orga
